Figalishious Blackberry Smoothie
Gluten-Free, Vegan, Serves 2
Ingredients:
For the fig layer:
- 1 ripe banana, frozen
- 2-3 fresh figs, stems removed
- 1/2 cup unsweetened almond milk
- 1 tablespoon chia seeds
- 1/2 teaspoon ground cinnamon
For the blackberry layer:
- 1 cup frozen blackberries
- 1/2 cup unsweetened coconut yogurt
- 1 tablespoon agave syrup
- 1/2 teaspoon vanilla extract
For garnish:
- Fresh fig slices
- Fresh blackberries
Directions:
In a blender, combine the frozen banana, fresh figs, almond milk, chia seeds, and ground cinnamon. Blend until smooth and creamy. If the mixture is too thick, you can add a little more almond milk to reach your desired consistency. Pour the fig smoothie into two serving glasses, filling each glass about halfway. Rinse out the blender and then add the frozen blackberries, coconut yogurt, agave syrup, and vanilla extract. Blend until smooth and creamy. Carefully pour the blackberry smoothie on top of the fig smoothie layer in each serving glass, filling the glasses to the top.
