Spiced Apple Crumble
Gluten-Free, Vegan, Serves 12
Ingredients:
For the apple filling:
- 6 medium-sized apples, peeled, cored, and sliced
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Pinch of salt
For the crumble topping:
- 1 cup gluten-free rolled oats
- 1/2 cup almond flour
- 1/4 cup chopped walnuts or pecans
- 2 tablespoons coconut sugar
- 2 tablespoons melted coconut oil
- 1 teaspoon ground cinnamon
- Pinch of salt
Directions:
Preheat your oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish or individual ramekins with coconut oil. In a large bowl, toss the sliced apples with maple syrup, lemon juice, ground cinnamon, nutmeg, cloves, and a pinch of salt until well coated. Transfer the apple mixture to the prepared baking dish or ramekins. In another bowl, combine the gluten-free rolled oats, almond flour, chopped walnuts or pecans, coconut sugar, melted coconut oil, ground cinnamon, and a pinch of salt. Mix until well combined and the mixture resembles coarse crumbs. Sprinkle the crumble mixture evenly over the apples in the baking dish or ramekins. Bake in the preheated oven for 35-40 minutes or until the apples are tender and the crumble topping is golden brown and crisp. Remove from the oven and let cool slightly before serving. Serve warm as is or with a scoop of dairy-free vanilla ice cream or coconut yogurt, if desired.
