Fizz & Frost: Strawberry Champagne Cake – Gluten-Free, Dairy-Free, Serves 12
For the Cake:
- 2 cups gluten-free flour blend
- 1 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1 cup dairy-free yogurt
- 1/2 cup coconut oil
- 1 cup strawberry puree
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- For the Frosting:
- 1 1/2 cups dairy-free butter
- 3 cups powdered sugar
- 1/4 cup strawberry puree
- 2 tablespoons pink champagne
- Fresh strawberries for decoration
Directions:
Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper. In a large mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. In another bowl, combine the sugar, applesauce, dairy-free yogurt, melted coconut oil, strawberry puree, and vanilla extract. Mix until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms. Divide the batter evenly among the prepared cake pans. Smooth out the tops with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove the cakes from the oven and let them cool completely on a wire rack.
While the cakes are cooling, prepare the frosting. In a mixing bowl, beat the dairy-free butter until creamy. Gradually add the powdered sugar, strawberry puree, and pink champagne. Beat until smooth and creamy. Once the cakes are completely cooled, assemble the cake by spreading frosting between the layers and over the top and sides of the cake. Decorate the cake with fresh strawberries if desired. Refrigerate the cake for about 30 minutes before serving to allow the frosting to set.y browned. Set aside. Divide the cooked rice or quinoa among 4 bowls. Arrange the cooked chicken, black beans, corn, avocado slices, cherry tomatoes, and chopped cilantro over the rice in each bowl. Optionally, add sliced jalapeños for some heat. Serve the bowls with lime wedges for squeezing over the bowl. Add dairy-free sour cream or salsa if desired. Mix all the ingredients together before eating, squeeze fresh lime juice, and enjoy this flavorful and healthy chicken burrito bowl.
