Gluten-Free, Vegan, Serves 12
- 4 cups frozen strawberries
- 2 cups coconut yogurt
- 2-4 tablespoons agave syrup
- 1 teaspoon vanilla extract
- Fresh strawberries, for garnish
Directions:
Make sure your strawberries are frozen. If they’re not already frozen, you can wash, hull, and freeze them for a few hours or overnight. Measure out the coconut yogurt and allow it to come to room temperature. In a blender or food processor, combine the frozen strawberries, room-temperature dairy-free yogurt, agave syrup, and vanilla extract. Blend until smooth and creamy, scraping down the sides of the blender or food processor as needed. If the mixture is too thick, you can add a splash of coconut milk to help it blend more easily.
Taste the mixture and adjust the sweetness if needed by adding more maple syrup or agave syrup, one tablespoon at a time, until it reaches your desired level of sweetness. Once the mixture is smooth and creamy, transfer it to a freezer-safe container. Smooth out the top with a spatula and cover the container with a lid or plastic wrap. Place the container in the freezer and freeze for at least 4 hours or until firm. When ready to serve, remove the frozen strawberry yogurt from the freezer and let it sit at room temperature for a few minutes to soften slightly. Scoop the frozen yogurt into bowls or cones.
