Green Goddess Salad
Gluten-Free, Vegan, Serves 6
Ingredients:
For the Salad:
- 6 cups baby spinach
- 4 cups chopped kale
- 1 ripe avocado, diced
- 1 cup cooked quinoa, cooled
- 1/2 cup chopped cucumber
- 1/2 cup chopped bell pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh dill
- 1/4 cup pumpkin seeds
- Salt and pepper to taste
For the Green Goddess Dressing:
- 1 ripe avocado
- 1/4 cup packed fresh parsley
- 1/4 cup packed fresh cilantro
- 2 tablespoons chopped fresh chives
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 clove garlic, minced
- 1/4 cup water
- Salt and pepper to taste
Directions:
In a large salad bowl, combine the baby spinach, chopped kale, diced avocado, cooked quinoa, chopped cucumber, chopped bell pepper, chopped red onion, chopped fresh parsley, chopped fresh cilantro, chopped fresh basil, and chopped fresh dill. Toss everything together until well combined. In a blender or food processor, combine the ripe avocado, fresh parsley, fresh cilantro, chopped chives, lemon juice, apple cider vinegar, minced garlic, and water. Blend until smooth and creamy, adding more water as needed to reach your desired consistency. Season with salt and pepper to taste. Drizzle the Green Goddess Dressing over the salad and toss until all the ingredients are evenly coated. Sprinkle pumpkin seeds on top for added crunch. Taste and adjust seasoning with salt and pepper if needed.
