Pomegranate Smoothie – Gluten-Free, Vegan, Serves 2
1 cup unsweetened almond milk
- 1 cup frozen pomegranate seeds
- 1 ripe banana, frozen
- 1/2 cup plain dairy-free yogurt
- 1 tablespoon chia seeds
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla extract
Directions:
In a blender, combine the unsweetened almond milk, frozen pomegranate seeds, frozen banana, dairy-free yogurt, chia seeds, pure maple syrup or agave nectar (if using), and vanilla extract. Blend on high speed until all the ingredients are well combined and the smoothie is creamy and smooth. Taste the smoothie and adjust the sweetness if needed by adding more maple syrup or agave nectar. Pour the Pomegranate Smoothie into glasses and enjoy immediately. You can optionally garnish the smoothie with a few extra pomegranate seeds for added texture and visual appeal.
